Happy Sunday guys! Rise and lift! It's so good to be home from Palm Springs with my home gym and my own kitchen. I freaking love coming home from a vacation because I feel so grateful to be back in my own little world. It's always a validation to me that I'm doing something right because my everyday life is something I miss when I travel.
Today I've jumped right back into Body Beast and picked up where I left off - LEGS!. It's also meal prep day/laundry day. I'm making THIS because of #pumpkinspice. It's a healthier version than the chemical stuff you're buying at Starbucks. I'm going to make a batch and add it to my coffee and shakes all week π Smart, I am.
PS - this is especially awesome if you're on a keto diet, low carb or carb cycling. It's also paleo (well, the stevia could arguably make it not so), vegan and wicked clean. Basically, it's suitable for anyone who loves pumpkin spice. It's universally awesome.
A note about Coconut Milk in this Pumpkin Spice Latte Recipe
I think it's worth mentioning that the coconut milk mentioned in this recipe is the stuff that comes from a can. I adore this brand, but Trader Joes also sells a great coconut cream it if you prefer to shop there. Just don't use regular dairy cream or coconut milk that comes in a milk carton. That's going to make your end result watery instead of creamy.

Healthy Pumpkin Spice Latte Mix
A healthy alternative to store-bought lattes.
Ingredients
- 1/2 cup Trader Joe’s Coconut Cream
- 1/2 cup Canned pumpkin
- Stevia to taste
- 1 tablespoon Pumpkin pie spice
- 1 teaspoon Cinnamon
- .5 teaspoon vanilla extract
Instructions
- Combine all ingredients in your blender and mix.
- Add a single portion to coffee or espresso and blend or stir.
- Sprinkle with more cinnamon.
