    Simple is best when it comes to eating low carb, but not at the expense of flavor!  I am loving these 5 low carb recipes right now and they're on repeat in my kitchen every week (event the sugar-free margaritas!).

    Hey friends!

    Just doing a little round up of some recipes I've been loving lately.  Personally, once I find something that I really love, I tend to make it on repeat which drives my husband nuts.  He loves variety and trying new things.  Me, I'm a creature of habit.  I could  go to the same restaurant for dinner every week wearing the same outfit for the rest of my life and be quite happy doing it.  The only reason I don't eat the same thing every day is that I've chosen a career that requires that I constantly come up with new recipes.  Experimental eating is an occupational hazard in my universe 🙂

    Easy Breezy Low Carb Recipes

    Speaking of recipe development, I've been giving a lot of thought lately to the style of eating I want to focus on this website.  For me, it has to be true to my own diet, which has evolved over the years as I've learned more about nutrition and how my body responds to food as I age.  The older I get, the less I can eat carbs without feeling like a stuffed sausage in my pants.

    I'm not a carb-hater and I'll never encourage you to eat nothing but butter and bacon, but I will continue to serve up easy recipes that are either low carb or keto-friendly.  They'll also be mostly plant-based because I strongly believe in the power of veggies to fuel a healthy body.

    Eating to Attain Personal Goals

    I know many of you come here because you're trying to lose weight.  I get it, and I am 100% confident that eating a low carb diet focused on whole foods can help.  It worked for me, and if I can lose 80 lbs, I'm pretty sure anyone can!  But here's the thing - I don't want to stop at just helping you lose 10, 20 or 40 pounds.  I want to help you feel better, think better and make better choices for the rest of your life so you'll be a 96 year-old badass rocking a crow pose in yoga class.  I want to help you win the longevity game and that involves so much more than just losing pounds on the scale.

    • It's about being truly happy - even when life gets hard.
    • It's about being present and peaceful.
    • It's about creating a strong body and and even stronger heart + mind.

    I know beyond a shadow of a doubt, that every struggle I've had in my own life (and there have been many) has equip me to help others get through the same struggle - one meal, one sleep, one meditation, one sweat at a time.

    Okay, I'll get off my soapbox now.

    Just keep putting one foot in front of the other, friend.  Oh, and eat the low carb enchiladas + skinny margarita, because life's too short not to enjoy every moment of it.
