Why make air fryer bread?
At only 129 calories and 3.2 net carbs, this air fryer bread is most DEFINITELY worth the whisk. If you don't have an air fryer yet, I also provide an option for an oven baked version, but you may not get the same glorious crusty finish.
If you're looking to invest in an air fryer, I highly recommend this one if there's only one or two people in your household. If you're frying for more than 2, try this one. Size matters when it comes to air frying (among other things).
What you'll need for this recipe
Ingredient Swaps
- If almond flour isn't your jam, you can swap out for your flour of choice. I've personally tried this recipe with coconut flour, and it turned out wonderfully.
- If you don't have, or would prefer not to use psyllium husk, you could use oat flour or gluten free baking flour instead, but this will change the macro balance of the bread (it will have more carbs). That said, psyllium husk adds lightness to gluten free bread. It's also the reason it's so high in fiber!
- If you don't want to use egg whites, you can use a single egg instead. You can try egg replacer, but this isn't something I've experimented with.
- If you don't have Everything But the Bagel Mix, you could use any seasoning you like. I would recommend sesame seeds, poppy seeds, or an Italian blend of spices like dried oregano, basil and or thyme.
Wait, is Psyllium Husk Gluten Free?
It sure is! In fact, psyllium husk works as a fantastic binding agent in gluten-free recipes instead of xanthan gum or guar gum. It's light in texture and extremely high in fiber. You can find it at most grocery stores, but I buy it on Amazon.
Step-by-Step Air Fryer Bread Instructions
Mix dry ingredients in a bowl, then add wet ingredients and mix well.
Don't worry about cottage cheese being clumpy. It will melt into gooey goodness.
With clean hands, shape mixture into a bun, bagel, twisty roll, letters - whatever you like.
Bake in an air fryer at 320 for 6 minutes, then flip with a spatula. Bake for another 6 to 8 minutes or until golden brown. Remove from air fryer and let sit for 2 mins.
Don't have an air fryer?
Preheat your oven to 320 and cook for 20 mins or until golden brown. You will sacrifice the amazing crust that can only be achieved by an air fryer, but it will still make amazing, low carb buns.
Can you toast bread in the air fryer?
Oh heck ya! Put your air fryer to 400 degrees, cut your air fryer bread roll in half and pop it in for 2 to 3 minutes, depending on how toasted you prefer your bread to be.
How to Store it
Because it's made with cottage cheese, it's essential to store this air fryer bread in the fridge. You can also freeze it in the freezer for up to 3 months.

It was just okay. I’m not sure why, but mine looked very dark and honestly looked like poop (or maybe a hamburger) - very unappetizing. Texture was fine but flavor was kind of weird. My husband will eat just about anything and wouldn’t take more than a bite of this.
