This simple paleo banana bread recipe is perfect when you’re looking for a treat, but you want to stay committed to your health goals. I offer variations that make it low carb, paleo and of course, sugar-free.
Today I’m sharing a recipe for paleo banana bread from way back. It’s almost paleo, except for the two tablespoons of oats – something I used to enjoy years ago. Over time, I’ve realized that grains are not the best thing for me. I find they leave me feeling hungry and craving more carbs, particularly if I eat them first thing in the morning. For some folks, grains are out of the question due to autoimmune deficiencies or gluten intolerances. For me, I just feel less hungry and more satisfied when I avoid them.
That said, two tablespoons of oats is not a big deal for me, so I’m leaving this recipe just the way it is.
How to make this fully paleo
There are two ways to make this paleo by swapping out the oats for either almond flour, or a paleo-friendly baking mix. I think Bob’s Red Mill does a great paleo pre-mix, but Amazon has several. I’ve never seen them in grocery stores.
How to make banana bread low carb
Are bananas low carb? Nope, they’re not. However, they’re still a whole food, a wonderful natural sweetener and well, you really can’t avoid them when your end goal is banana bread 🙂 . But if you want to reduce the overall carb content, you can reduce the number of bananas used from three to down to one (this will of course, make the flavor less banana-like). In its place, you need to create more sweetness and moisture, so I recommend using a 1/4 cup of coconut milk or coconut cream, and add additional sweetness (to your preferred taste) with stevia or erythritol. I also recommend swapping the oats for almond flour.
Why I love this Paleo Banana Bread recipe
Ah, it takes me back to my fitness competition days. Those are long behind me now and I don’t miss them, but I do miss my early days of learning about clean eating and how powerful it can be, not just for weight loss, but also for brain clarity, energy and vitality. In my entire life, I’ve never felt as good as I do in my 40’s. I credit my diet for that and I’m so grateful for everything I’ve learned.

Banana Bread Macro Breakdown

Want more low carb baking inspiration?
- 1 c egg whites, you could use whole eggs, too
- 2 T Oats, “T”= Tablespoon
- 1 T Coconut flour, or any flour
- 1/3 c PB2
- 3 ripe bananas
- ¼ t vanilla extract, little “t” = teaspoon
- ½ t baking powder
- 1 t cinnamon
- .5 t sea salt
- 1 T coconut oil, you could use nut butter here instead if you like
- Preheat oven to 350 degrees
- Grease a baking pan (I actually used a casserole dish as I don’t own a bread pan)
- Add the bananas and egg whites to a bowl and whisk together with a hand blender
- Add the remaining ingredients and mix well
- Add to greased pan
- Bake for about 30 to 40 minutes or until golden on top.
