Today I'm sharing a recipe for protein banana bread from way back. The recipe has been revised to be grain-free, lower in carbs and simpler in terms of ingredients.
If you're someone who enjoys supplementing your diet with protein powder, you're going to love sneaking it into baked goods. It not only raises the protein macronutrients, but it also reduces the need for other flours which can often work against us when we're trying to lose body fat.
How to make banana bread low carb
Are bananas low carb? Nope, they're not. However, they're still a whole food, a wonderful natural sweetener and well, you really can't avoid them when your end goal is banana bread π
However, this recipe only calls for two bananas, so overall, it's not a large portion
What you'll need to make protein banana bread
- 2 bananas
- 3/4 cup vanilla whey protein
- 1/3 coconut nut flour
- 5 eggs
- 1tbsp vanilla
- 1/2 cup swerve
- 1/2 teaspoon baking powder
- 1 teaspoon cinnamon
- pinch of salt
Which Protein Should You Use?
I recommend a whey protein for this recipe as it will give it a much better texture. If you're dairy-free, you can use a plant-based protein, but you want to be careful to pick one that doesn't have a grainy texture. I think this brand does a good plant-based protein.

Protein Banana Bread (or Muffins)
A simple healthy alternative to regular banana bread. It's lower in carbs, high in protein and the perfect vessel for smearing almond butter on π
Ingredients
- 2 bananas
- 3/4 cup vanilla protein
- 1/3 coconut flour
- 5 eggs
- 2 teaspoons vanilla extract
- 1/2 teaspoon cinnamon
- 1/2 cup swerve
- 1/2 tbsp baking powder
- pinch of salt
Instructions
- Preheat oven to 350 degrees
- Grease a baking loaf or muffin tin
- Add the bananas, eggs and vanilla extract to a bowl and whisk together with a hand blender.
- In a separate bowl, add the dry ingredients, mix well, then add to the wet ingredients. Mix once again with the hand blender.
- Add mixture to greased pan
- Bake for about 30 minutes or until golden on top.
Notes
If you are using a muffin tin instead of a loaf, you may need to bake for a few minutes less.
Feel free to add extra goodies to your protein banana bread. My favorites are:
