I used to make protein pancakes like it was my job
Actually, it was my job (which is why these are the best protein pancakes on the internet)! I had a protein pancake company for about 3 years.
Man, I put so much blood sweat and tears (many tears) into that company, but it wasn't to be. I had picked a market I wasn't really that interested in serving (the bodybuilding community) and I had a product that was expensive to make, and hard to scale.
I got to a point where I had to take on investors or cut the cord and while I loved running my own business, it was time to let it go.
That was hard.
But now I'm an expert in protein pancakes and food start ups, so all is not lost 🙂
What you'll need to make these protein pancakes
- almond flour - if you don't have almond flour, just double up on the coconut flour
- coconut flour - same as above! If you don't have coconut flour, just double up on the almond flour.
- vanilla protein powder - I used Designer Whey for this recipe. If you don't have vanilla protein powder, use what you have! The pancakes will take on whatever flavor protein you use.
- almond milk - or any milk of your choice. I just prefer almond.
- vanilla extract - this is optional if you're using vanilla protein.
- egg whites - or swap with 2 eggs
- baking powder and salt.
- stevia - however if you don't like or have stevia, use whatever sweetener you have on hand, but you'll have to taste test to ensure you have the right amount of sweetness.
How to make them
First, put all your dry ingredients in a bowl.
Next, add the wet ingredients and mix really well. Like I mentioned - if you have a hand blender, it makes for fluffier pancakes, but it's not necessary.
Always add the stevia last in small portions. Taste as you go so you don't over sweeten. Stevia is powerful stuff. I never use more than two (depends on how sweet the protein powder is).
Once your batter is ready, it's time to pour it on your greased pan and start cooking!
Protips for making the BEST protein pancakes
- The protein you use will have a big impact on the quality of your pancakes. The finer the protein, the better the outcome.
- Plant-based proteins are NOT a great option for pancakes as they provide a very grainy texture.
- If you're doubling up on the coconut flour, you may need to add more milk as coconut flour tends to absorb more moisture.
- If you're making a chocolate protein pancake, skip the vanilla extract.
- Adding some Lily's No-Sugar Added Chocolate Chips is never a bad idea.
- Using a pancake pan will give you a perfectly shaped stack.
- If you're using a regular skillet, give yourself grace - the first one always sucks.
- If you're going to all this trouble to make a high protein, low carb meal, don't cover it with regular pancake syrup which is just liquid sugar! Do without or use Walden Farms Pancake Syrup which has no calories.
- If you want to be really fancy, mix the batter with a hand mixer. I find it makes your pancakes extra fluffy.

Protein Pancake (21 Day Fix Approved)
This simple pancake recipe is perfect for managing hunger and cravings throughout the day. To avoid added sugar, I like to eat my pancakes with nut butter, sugar-free syrup or top it with sour cream and a few berries.
Ingredients
- 2 tablespoons almond flour
- 2 tablespoons coconut flour
- 1 scoop vanilla protein powder
- ½ teaspoon of salt
- ½ cup coconut or almond milk
- ½ teaspoon of vanilla extract
- 1/3 cup of egg whites
- ½ teaspoon of baking powder
- 2 sachets of stevia, or more if you like them sweeter
Instructions
- Mix dry ingredients in one bowl and wet ingredients in another then combine all the ingredients in whichever bowl is easiest to clean.
- Set your pan to medium heat and cover with a light coat of non-stick spray.
- Add a pancake-sized dollop of batter to the heated pan and then flip it after it looks like it’s ready – about 2 or 3 mins. Cook the other side for another 2 or 3 minutes and serve.
