We’re getting dangerously close to Valentines Day, so I wanted to create something super quick you can make for your man that’s as sweet as he is, but also as healthy as he is (or hopes to be). This is the kind of dessert that would be great after a romantic meal for two because it’s light, simple and delicious. It’s also devoid of anything that may induce gas, which is a nice perk on such a romantic occasion.
Was that TMI? Sorry.
Plant-Based Protein Pudding
So this little recipe is more like an assembly of a few items rather than cooking or baking. It’s so easy to pull together and OMG it’s yummy like crazy. It ends up being around 350 calories and a whopping 35 grams of protein and it’s pudding! You can’t get better than that, can you?
Want a sugar-free version?
If you’re keto, low-carb or just really conscious about sugar, you’ll want to opt out of the honey and use stevia instead. Personally, I love using stevia and I’m so used to the flavor that it doesn’t bother me at all, but I know it’s a transition for some.
However, if you do use honey, I don’t think you’re sacrificing any health benefits by using it in this recipe. Natural, unprocessed honey has a host of health benefits from lowering blood pressure to improving cholesterol, not to mention an awesome flavor that’s not overly sweet.
Vegan dessert on the fly
I could yammer on about the health benefits of each of these ingredients, but bottom line, it’s a handy way to get a sweet treat in without completely ditching your clean eating aspirations.

- 1 small plain soy or dairy yogurt
- 1 scoop chocolate Vega protein powder
- 1 tablespoon raw cacao, optional
- 1 tablespoon raw honey
- ½ cup berries
- ¼ cup coconut milk
- Mix everything together and use the coconut milk at the end just in case the protein powder makes the mixture a little too dry or chalky. I also added a dash of ground flax seed to crank up the fiber.
