The reason these green beans are (in my opinion) the best on the internet is that they're crispy - and not even just a little. They're a lot crispy. They magically turn an otherwise dull veggie into something that resembles a french fry (if you close your eyes and really engage the imagination).
This recipe is suitable for Low carb, keto and paleo diets
Whether your paleo, keto, low carb or vegetarian, you can enjoy this recipe. The coconut and almond flour mixture keeps the carbs low and the flavor factor high. If you're vegan, there's lots of egg-substitute on the market that would make a great alternative to real eggs. I recently tried Just Egg (sold at HEB), but Neat also makes great vegan products.
How to make this green bean recipe (it's really easy)
- Put all the dry ingredients into one bowl and the egg whites in another.
- The key is to parboil the green beans for about 2 mins, then toss into ice water to stop the cooking process. Parboiling (which is a fancy term for boiling for a short time), brings out the green color and slightly cooks the beans while infusing them with moisture so they don't dry out when they crisp.
- Once your beans are cooled off, dip them in egg whites then roll them in the dry mixture and lay out on the cookie sheet.
- Cook for approx 10 to 12 mins or until golden brown.
- WATCH THEM!! They will burn in an instant, so keep your eye on the prize!
What to pair with green beans?
I'd opt for a clean protein like salmon or grilled chicken. Instead of including a starchy carb in your meal, if you're trying to reduce carbs, try some spaghetti squash or any of my many easy to prepare low carb side dishes.

- 1 bunch green beans, about 3 cups
- ¼ cup egg whites
- 2 T almond meal
- 1 T coconut flour
- Seasoning of choice, I used salt, pepper, mrs dash, Herb d Provence & garlic powder
