I bet you would have never thought of combining the humble sweet potato with something as simple as a spritz of lime, but believe it or not - it's amazing. It takes zero time to make, it's the purest of food and it's so easy, even a toddler could prepare it.
Even if you generally lean low carb, don't underestimate the value of a little sweet potato in your diet a few days a week. Just a small serving (half a cup) is packed with vitamins, minerals, antioxidants and fiber.
Baked Sweet Potatoes with Lime - Simple and Genius!
Whether you're following the 21 Day Fix Meal plan, 2B Mindset, or you simply have the intention to eat cleaner and more simply, you're going to LOVE how ridiculously simple the recipe is.
Very often we overcomplicate food preparation or cooking. I find that some of the simplest meals are made in less than 15 minutes (like this one). Pair it with Chicken Parmesan or mix up the mashed potato with some shredded chicken and you're good to go for a full, delicious and nutritious meal.
Just 3 Ingredients
All you need for this recipe are sweet potatoes, a lime and some salt. If you're real fancy, feel free to add a little pepper, too.
How to make Lime Sweet Potatoes
There's two ways to make this recipe - mashed or baked. If you opt to mash, you can boil or microwave the potatoes until soft (cook for 10 to 15 minutes).
If you choose to bake the potatoes, just cut them up in any shape that pleases you, lay them out on a cookie sheet and bake at 400 for about 15 minutes.
Either way, once your taters are cooked through, simply season with a squeeze of lime and a sprinkle of salt. It's that simple.
Personally, I'm a fan of microwaving as it's the easiest way to go. Also, the fresh lime juice mixed with the mashed inside of the potatoes makes for a wonderful flavor combo.
If you opt to make baked potato slices, simply squeeze a little lime juice and sprinkle salt before serving.
How to Store Lime Sweet Potatoes
Store your sweet potatoes in a sealed container in the refrigerator for up to 5 days.

Sweet Potatoes + Lime Recipe
The simplest, quickest, easiest and healthy way to enjoy a sweet potato.
Ingredients
- 1 sweet potato
- 1/2 lime
- sea salt
Instructions
- Cook sweet potato by microwaving it for 7 - 10 minutes depending on size (be sure to poke some holes in it first!).
- Mash the cooked potato and squeeze fresh lime juice over top.
- Enjoy without any further seasoning. It won't need it!
