Low carb potato salad? Oh yes, it's possible!
If you're looking to reduce carbs, but don't want to give up your favorite comfort foods like potato salad, this simple recipe is a perfect compromise. You still get the same texture and flavor but at a fraction of the overall calories and carbohydrates.
I used to LOVE potato salad when I was a kid. Sadly, potatoes don't love me back. Or maybe they love me too much because when I eat them, they just want to cling to my thighs and never let go. Once I discovered my intolerance to really starchy foods, I had to drop my love of all things potato (hard for an Irish girl, let me tell you) in favor of less starchy veggies.
So, cauliflower to the rescue, right?
I got the idea for cauliflower potato salad from someone on Instagram and thought it was brilliant. Seriously, what can't you make with it?? The recipe took a little tweaking to get the flavor right.
Just don't forget to add the pickle. Pickles are life.

Low Carb "No-tato" Salad (Actually, It's Cauliflower)
A quick, simple and low carb option to traditional potato salad.
Ingredients
- 14 ounces cauliflower rice
- 4 hard boiled eggs, chopped
- 1/4 cup raw onion, chopped
- 2 celery stalks, chopped finely
- 1 large pickle, finely chopped
- 1 tsp mustard
- 1 tsp apple cider vinegar, any kind on hand will work
- 1/2 tsp dried or fresh dill
- 3 Tablespoons Bolthouse, Cilantro Avocado Dressing
- Salt and pepper to taste
- Green onion, for garnish
Instructions
- Boil eggs, then set aside to cool
- In a saucepan, sprayed with non-stick spray, cook the cauliflower rice (about 8 to 10 mins) until soft.
- Once cooked, set cauliflower aside to cool
- Chop onion, pickle, and celery and put into a medium sized bowl
- Add mustard, dill, and vinegar to the bowl
- Peel eggs and chop finely. Add to bowl
- Once cooled, add cauliflower rice to the bowl
- Mix with Bolthouse, Cilantro Avocado Dressing (use more than 3 tablespoons if you prefer a creamier salad).
- Salt and pepper to taste
- Garnish with green onion and serve.
